Once you get to the meringue stage of any macaron recipe, add a heaped table spoon of Sugar flair Red extra food dye or any colour of your choice!

I'm making red velvet macarons hence the cocoa powder but feel free to flavour the macaron shells with anything else or leave them plain.

The mixing stage is called the 'macaronage'. Whenever you're making shaped or textured macarons you may which to stop just before the 'lava' stage

You can use a heart template or wing it like me lol.

Starting from the top, apply pressure at the top to make the left half of the heart and then starting from the top again make the right side of the heart.
As you're coming down release the pressure (stop squeezing your piping bag) so you have an almost circle for the tips of the heart.
Then let your macarons rest and bake as normal. If you're using a no rest recipe like mine pop them straight into the oven and fill as normal!
Happy Valentine’s Day! xo
